Made these on the weekend and they were really yummy! It’s taken me a whole week to blog about it after both Hudson and I got sick and the week turned into a gong show… better late than never right?!
I really enjoyed this recipe and made a couple modifications to make it gluten free. Here is the original from Weelicious: http://weelicious.com/2010/10/05/cottage-cheese-pancakes/
- 3 eggs
- 1 cup cottage cheese
- 1 teaspoon vanilla extract
- 2 tablespoons honey or agave
- 3/4 cup of GF flour mix (I used 75% quinoa, and 25% potato starch and rice flour)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- butter, oil or oil spray
Wisk first four ingredients together. In a separate bowl mix the dry ingredients and then add them to the wet mixture. Stir until combined. Heat a large frying pan and lightly coat with oil or butter. Pour into pan and cook until pancake is firm enough to flip (I found these took a little longer than normal pancakes).
